Breakfast Focaccia Baked with Kipster Eggs, Herbs & Parmesan
A golden, crispy focaccia infused with Mediterranean flavors and baked to perfection with fresh eggs as an Easter brunch recipe is a guaranteed crowd-pleaser. Using Kipster eggs, you’re not only choosing a flavorful and nutritious option, but also a responsible choice for you and your family.

Ingredients:
2 cups bread flour
1 sachet activated dried yeast
A tsp salt
1 tsp caster sugar
1 cup lukewarm water
3-5 large Kipster eggs (the world’s most sustainable eggs!)
1 cup cherry tomatoes, halved
1/3 – 1/2 cups of pitted olives, halved
5 sprigs fresh thyme
1/4 cup parmesan cheese, grated
Olive oil
Sea salt flakes
Method:
1️⃣ Prepare the dough: In a large bowl, mix the flour, yeast, salt, and sugar. Make a well in the center and pour in half of the lukewarm water. Use your hands to knead, gradually adding the rest of the water, until you get a smooth and elastic dough (about 5 minutes).
2️⃣ Let it rise: Cover the bowl with a damp kitchen cloth and let the dough rise in a warm place for 30 minutes, or until doubled in size.
3️⃣ Shape the focaccia: Transfer the dough to a deep roasting tray (about 12 x 8 inch) generously coated with olive oil. Stretch it to the edges and press down with your fingers to create small dimples.
4️⃣ Add toppings: Drizzle the dough with olive oil. Make small egg-sized wells using rolled tin foil and press them into the dough, leaving space for the toppings. Arrange the cherry tomatoes, olives, and thyme in the gaps, pressing them slightly into the dough. Sprinkle with grated parmesan. Let the dough rest for another 20 minutes.
5️⃣ Bake the focaccia: Preheat the oven to 425°F (400°F fan). Bake the focaccia for 15 minutes, or until golden brown.
6️⃣ Add the eggs: Carefully remove the tin foil balls. Crack each Kipster egg into a small ramekin and pour it into the prepared wells. Return the tray to the oven and bake for another 5 minutes, or until the egg whites are set but the yolks remain runny.
7️⃣ Serve & enjoy! Drizzle with extra olive oil and sprinkle with sea salt flakes before serving warm.
